Origin: vineyard, owned by the Vaona family, located in the municipal district of San Pietro Incariano, and more precisely in the hilly area of Castelrotto
Soil: of a complex nature. Within the same vineyard it presents an extremely variable chemical and physical composition. Intrusions of ancient lava flows in calcareous deposits are a constant on the entire plot of land. The growing method in use is the Guyot method, which is very suitable given the location and which allows for an adequate number of stubs per hectare and a consequent vegetative containment.
Grape variety: Corvina Corvinone 50%, Raboso Veronese 20%, Cabrusina 10%, Oseleta 20%.
Harvest: after an accurate selection process, the different grape varieties, which are harvested according to their degree of maturation, are placed in small wooden boxes and left to wither for a period of time that varies according both to the time of harvest and to the demands of the specific year (30 to 60 days).
Vinification technique: The times of contact with the marcs range from 35 to 45 days and allow for both a high concentration of the aromatic substances and for a significant polyphenolic
